We all have a love/hate relationship with sweet foods.

The problem is, they taste so good but are often filled with sugar, artificial sweeteners and long lists of preservatives and nasties. Simply put, sweet treats usually lack the range of nutrients the body needs to be healthy.

It you are a sweet-tooth, with a particular fondness of ice cream, then we have the healthy solution for you! Made out of frozen bananas, nice cream is going to be your new favorite dessert.

Best of all this recipe uses over ripe-bananas that often get thrown out, and contribute to the trend towards wasteful food management and our household carbon footprint. By freezing overripe or bananas that are turning brown as it happens, you will always have the most important ingredient on-hand for when the sweet tooth bites!

Banana ‘Nice Cream’ Recipe

Total Time: 5m

Yield: 1-2 servings

Ingredients

2-3 overripe, frozen bananas

optional milk of choice, if needed

pinch salt

Instructions

To make the ice cream, throw around 2-3 frozen bananas into a blender or food processor—adding a pinch of salt and 2-4 tbsp milk of choice for smoother blending if desired—and blend until you achieve a soft-serve texture. You can serve immediately, or transfer to a container and freeze an additional 30 minutes, then scoop out with an ice cream scoop

 

Try different flavours!

Chocolate Banana Ice Cream: Use 3 bananas. Add 1/4 tsp pure vanilla extract, pinch salt, and 3 tbsp cocoa powder.

Pistachio: Make the original recipe, adding 2-3 tbsp pistachio butter and 1/8 tsp pure vanilla extract. Sprinkle crushed pistachios on top if desired.

Peanut Butter: Use 2-3 bananas, add 1 tablespoon of natural creamy peanut butter. Sprinkle crushed peanuts on top.

Mint Chip: Make the original recipe, add 1 tablespoon dark chocolate chips, 1 drop of peppermint extract

Very Berry: Make the original recipe below, adding 1 cup frozen berries of choice and 1/8 tsp pure vanilla extract.

Cookies’n Cream: Make the original recipe below, adding 2 tbsp coconut butter if desired. After blending, add in a crushed biscuits
